Crispy Chicken Parmesan Recipe (Better Than Takeout)
Chicken Parmesan is the dinner my family asks for on birthdays, and honestly, it is the dish I order most at Italian restaurants too. A thin, golden, extra crispy chicken cutlet, smothered in marinara and bubbling mozzarella, served over a pile of spaghetti. This is the chicken Parmesan recipe I have made for years, and it stays crispy under the sauce thanks to a couple of simple tricks I will share below.
Quick answer: To make chicken Parmesan, slice 2 chicken breasts in half to make 4 thin cutlets and pound them to ½ inch (1.25 cm). Coat in flour, then beaten egg, then a mix of panko breadcrumbs and grated Parmesan. Pan fry in oil for 3 to 4 minutes per side until golden. Top each cutlet with marinara and mozzarella and bake at 425°F (220°C) for 8 to 10 minutes until the cheese bubbles and the chicken reaches 165°F (74°C).
It serves 4 and takes about 40 minutes. I also include baked and air fryer versions.
Why You Will Love This Chicken Parmesan?
- It is extra crispy. Panko mixed with Parmesan makes a crunchy, golden crust that holds up under the sauce.
- The chicken stays juicy. Thin, even cutlets cook fast and never dry out.
- It is restaurant quality at home. And it costs a fraction of the price.
- Kids love it. Crispy chicken, cheese and pasta is always a winner.
- It is flexible. Pan fry, bake or air fry, whatever suits your night.
Ingredients
This serves 4.
For the chicken
- 2 large boneless, skinless chicken breasts (about 1½ lb / 680g)
- 1 tsp salt and ½ tsp black pepper
- ½ cup (65g) all purpose flour (plain flour)
- 2 large eggs, beaten with 1 tbsp water
- 1 cup (60g) panko breadcrumbs
- ½ cup (50g) Italian style breadcrumbs
- ½ cup (50g) finely grated Parmesan
- 1 tsp Italian seasoning and ½ tsp garlic powder
- ½ cup (120 ml) olive or vegetable oil for frying
For the topping
- 1½ cups (360 ml) marinara sauce, store bought or homemade
- 1½ cups (170g) shredded mozzarella, or 8 oz (225g) fresh mozzarella slices
- ¼ cup (25g) grated Parmesan
- Fresh basil leaves
To serve
- 12 oz (340g) spaghetti, cooked, with extra warm marinara

A few notes on the ingredients
Chicken: Slicing each breast in half horizontally gives you thin cutlets that cook evenly. You can also buy ready made thin cutlets.
Breadcrumbs: Panko gives the crispiest crust. Mixing it with regular Italian breadcrumbs helps the coating stick and adds flavor.
Marinara: Use a good quality store bought sauce, or simmer a can of crushed tomatoes with garlic, olive oil, basil and a pinch of salt for 15 minutes.
Mozzarella: Shredded low moisture mozzarella melts evenly and stays stretchy. Fresh mozzarella is creamier but releases more water.
How to Make Chicken Parmesan (Step by Step)
Make the cutlets. Slice each chicken breast in half horizontally. Place between two sheets of plastic wrap (cling film) and pound to an even ½ inch (1.25 cm) thickness. Season both sides with salt and pepper.
Set up the breading station. Put the flour in one shallow dish, the beaten eggs in a second, and the panko, Italian breadcrumbs, Parmesan, Italian seasoning and garlic powder mixed together in a third.
Bread the chicken. Dredge each cutlet in flour and shake off the extra, dip in egg, then press firmly into the crumb mix on both sides. Lay on a plate and let them rest for 10 minutes so the coating sets.
Heat the oven. Heat your oven to 425°F (220°C) and set a wire rack on a baking sheet.
Pan fry. Heat the oil in a large skillet over medium high heat until it shimmers. Fry the cutlets 2 at a time for 3 to 4 minutes per side until deep golden. Move them to the wire rack.
Top. Spoon about 3 tbsp of marinara down the middle of each cutlet, leaving the edges uncovered so they stay crispy. Top with mozzarella and a sprinkle of Parmesan.
Bake. Bake for 8 to 10 minutes until the cheese is melted and bubbling and the chicken reaches 165°F (74°C). Broil for the last 1 to 2 minutes for golden spots.
Serve. Garnish with fresh basil and serve over spaghetti with extra warm sauce.
Baked Chicken Parmesan (No Frying)
Toast the breadcrumb mix in a dry pan with 2 tbsp olive oil until golden before breading the chicken. Place the breaded cutlets on a greased wire rack over a baking sheet, spray lightly with oil and bake at 425°F (220°C) for 15 to 18 minutes. Top with sauce and cheese and bake 8 minutes more. It is a little less crispy than fried, but still really good and much less mess.
Air Fryer Chicken Parmesan
Spray the breaded cutlets with oil and air fry at 380°F (195°C) for 10 to 12 minutes, flipping halfway. Add the sauce and cheese and air fry 2 to 3 minutes more until melted. Cook in batches so the basket is not crowded.

What to Serve With Chicken Parmesan
- Spaghetti or penne in marinara (the classic)
- Garlic bread or warm focaccia
- A Caesar salad or simple green salad
- Roasted broccoli, zucchini or green beans
- Creamy pasta on the side, like my easy chicken alfredo sauce over fettuccine
If you want another comforting dinner for a busy night, my easy one pot creamy chicken and rice comes together in one pot.
Easy Variations
- Chicken Parmesan sandwich. Pile a cutlet with sauce and cheese on a toasted hoagie roll or ciabatta.
- Eggplant Parmesan. Use ½ inch thick eggplant slices instead of chicken for a vegetarian version.
- Chicken Parmesan bake. Layer cooked pasta, sauce, chopped breaded chicken and cheese in a dish and bake for 20 minutes.
- Gluten free. Use gluten free flour and gluten free panko.
- Pesto Parmesan. Spread a little pesto under the marinara for extra flavor.
My Tips for the Crispiest Chicken Parmesan
- Pound the chicken evenly. Even thickness means even cooking, with no dry edges or raw middles.
- Let the breading rest. Ten minutes helps the coating stick so it does not fall off in the pan.
- Use hot oil. If the oil is not hot enough, the breading soaks up grease and turns soggy.
- Rest on a wire rack. Paper towels trap steam under the chicken. A rack keeps both sides crispy.
- Do not drown it. Spoon sauce down the middle and leave the edges bare so they stay crunchy.
Common Mistakes
- Crowding the pan. It drops the oil temperature. Fry 2 cutlets at a time.
- Moving the chicken too soon. Let a golden crust form before flipping.
- Too much sauce. It turns the coating soggy. Serve extra sauce on the side.
- Thick, uneven cutlets. They burn outside before cooking inside.
If you love creamy chicken dinners as much as crispy ones, my marry me chicken with sun dried tomatoes is another 30 minute favorite in my house.
How to Store and Reheat?
Fridge: Store leftovers in an airtight container for up to 3 days.
Reheat: For the crispiest result, reheat in the oven at 375°F (190°C) for 10 to 15 minutes or in the air fryer at 350°F (175°C) for 5 to 6 minutes. The microwave works, but the crust softens.
Freezer: Freeze breaded, uncooked cutlets on a tray, then bag them for up to 3 months. Fry or bake from frozen, adding a few minutes.
Chicken Parmesan FAQs
What is the difference between chicken Parmesan and chicken Parmigiana?
They are the same dish. Parmigiana is the Italian name, and Parmesan is the common name in the US. In Australia and the UK it is often called “chicken parmi” or “parma.”
How do I keep chicken Parmesan crispy?
Use panko, fry in hot oil, rest on a wire rack and add only a little sauce down the center. Serve extra sauce on the side.
Can I make chicken Parmesan ahead of time?
Yes. Bread the cutlets and refrigerate them for up to 24 hours, or freeze them. Fry and top just before serving.
What temperature should chicken Parmesan be cooked to?
Chicken should reach an internal temperature of 165°F (74°C).
Why does my breading fall off?
The chicken may have been wet, or the breading did not rest. Pat the chicken dry, shake off extra flour and let the coated cutlets rest for 10 minutes.
Final Thoughts
This crispy chicken Parmesan recipe brings that cozy Italian restaurant feeling right to your kitchen. It takes a little more effort than a sheet pan dinner, but one bite of that crunchy, cheesy chicken over spaghetti makes it worth it. Save it for your next special dinner or birthday night.
